The other night Jon and I were super hungry, and therefore didn’t want to spend any more than 5 minutes cooking. Considering the only things you can get with 5 minutes is Ramen or Easy Mac, we opted for a taco hash with ground beef, sweet potatoes, beans, and eggs. I’m pretty sure I walked in the door and sat down to eat within 20 minutes, so this is definitely getting added to my list of quick go-to recipes (along with sausage and kale, stir fry, and avocado toast with eggs).
The one missing piece is taco seasoning though—does anyone have any suggestions for all natural? Although the packets of taco seasoning taste SO good, I’m not a fan of all the things in there that I can’t pronounce.
Serves 4 hungry people | Cook time: 15 minutes
- Ground beef
- White onion (chopped)
- 1 can black beans (drained and rinsed)
- Sweet potato (.5-1 per person, depending on size; I used a spiralizer to make mine into noodles to cook faster, but you could also cube and cook at 400* for 15 minutes)
- Eggs (2-3 per person; scrambled but uncooked)
- Cook ground beef in skillet until brown. Remove and put in separate container.
- Add garlic and white onion to skillet and sauté until fragrant.
- Add sweet potatoes and beans.
- Once cooked, add ground beef.
- After ground beef is warmed, push everything to one side and add eggs on other side
- If not eating all at once, remove skillet’s ingredients before adding eggs, to use as leftovers
- Scramble eggs on one side of skillet; once scrambled, mix everything together
- Plate and top with cilantro, salsa, and avocado
