One of my favorite things to cook wit is pesto, and a bonus is when it’s homemade. I’ve been eating this pesto all week and I’m actually looking forward to having it for the 5th day... in a row!
It’s easy to make, only requires a few ingredients, and is super creamy that you’d think there’s cheese in it (but there isn’t)!
I love eating this creamy pesto on top of pasta with chicken and cherry tomatoes.
Serves: 5+ servings | Prep Time: 5 minutes
- 1 cup arugula
- 1 cup basil
- ½ cup olive oil
- ½ cup water
- 2 cloves garlic
- Juice from ½ lemon
- 1 tbsp salt
- ½ tbsp pepper
- 1 ½ cup almond flour (makes it thick and creamy)
- Add arugula, basil, olive oil, water, garlic, lemon juice, salt, and pepper to food processor (or blender) and blend until almost smooth.
- Add almond flour and blend until almost smooth (I like my pesto a bit chunky).
