Creamy Pesto

One of my favorite things to cook wit is pesto, and a bonus is when it’s homemade. I’ve been eating this pesto all week and I’m actually looking forward to having it for the 5th day... in a row!

It’s easy to make, only requires a few ingredients, and is super creamy that you’d think there’s cheese in it (but there isn’t)!

I love eating this creamy pesto on top of pasta with chicken and cherry tomatoes.


Creamy Pesto

Serves: 5+ servings | Prep Time: 5 minutes


  • 1 cup arugula
  • 1 cup basil
  • ½ cup olive oil
  • ½ cup water
  • 2 cloves garlic
  • Juice from ½ lemon
  • 1 tbsp salt
  • ½ tbsp pepper
  • 1 ½ cup almond flour (makes it thick and creamy)


  1. Add arugula, basil, olive oil, water, garlic, lemon juice, salt, and pepper to food processor (or blender) and blend until almost smooth.
  2. Add almond flour and blend until almost smooth (I like my pesto a bit chunky).
  3. Enjoy!
