Guinness Braised Pot Roast

I’m not even going to try and pretend that I like Saint Patrick’s Day-- I’m not Irish, I don’t really like to drink, and large events aren’t really my thing-- so cooking with Guinness was the most St. Paddy’s Day thing I was signing myself up for this year.

In my opinion, pot roasts are one of the easiest things you can make as long as you have a crock-pot. Grab some meat, sear each side, then throw it in the crock-pot with veggies, potatoes, and some liquid-- good to go in 4-8 hours! Perfect for a busy day… or even a relaxing day when you can really appreciate that extra time not needed to prepare dinner.

This dish was extra great because it gave me enough leftovers for 1-2 meals... something that's necessary when I'm heading to NYC on Thursday and really don't feel like making another trip to the grocery store.

Guinness Braised Pot Roast

Serves: 4 hungry people | Prep time: 15 minutes; Crock-pot time: 4-6 hours (high), 6-8 hours (high)

Ingredients

  • 4 pounds pot roast (I used the Cabernet one from Trader Joe’s)

  • 1 bottle Guinness

  • 1 cup water (could use beef broth)

  • 1 white onion (chopped)

  • 1 cup carrots (chopped-- I used baby carrots)

  • 1 cup celery (chopped)

  • 2 cups baby potatoes (chopped-- I used Trader Joe’s multi color ones 8 in total)

  • ½ cup white mushrooms (chopped)

  • Olive oil

  • Garlic

Instructions

  1. Sauté onions in olive oil and garlic until fragrant. Sear pot roast on each side.

  2. Add pot roast and onions to crock-pot.

  3. Add carrots, celery, potatoes, and mushrooms to crock-pot.

  4. Add Guinness and water.

  5. Cook on high for 4-6 hours or high for 7-8 hours.

  6. Enjoy!
